In 2013, we decided to jump in on the maple action and try to make maple syrup ourselves. We started with 12 taps and boiled our sap on a turkey fryer. The next year, we wanted to make a little more, so we added about 10 more taps and boiled over a fire pit. The next year, we upped the ante by purchasing a small half-pint evaporator and increased our taps to about 70 trees. In 2017, we went even bigger, buying an extension kit for our evaporator and increased our taps to 150. This year, we grew once again! We purchased an RO allowing us to more than double our taps from 150 to a little over 300. As you can see, we have continuously grown with our sugaring while ever perfecting our process. The result is one you can taste for yourself.
We cook our Maple syrup on a wood fired evaporator and make our syrup in small batches. We go tree to tree and collect all of our sap by hand. We then filter our sap before boiling when we run it through our RO to reduce the amount of water in the sap, thus reducing our boiling time. Once the maple sap makes the transition to maple syrup, we filter it again before we fill our beautiful bottles.
